my 2 favorite watermelon recipes

I have so many favorite recipes to make from summer time produce but the the 2 recipes that I make get and that gets the most accolades are my Watermelon Salad and my Watermelon-Feta-Champagne Refresher.

Watermelon Salad Recipe:

Ingredients:

  • 4 cups cubed seedless watermelon
  • 1 cup mixed greens
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped mint
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mix together the watermelon, mixed greens, feta cheese, and chopped mint.
  2. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper.
  3. Drizzle the dressing over the watermelon mixture and toss to combine.
